Vegetable of the Week: Turnips

Turnips – Try them, you’ll like them!

This week I decided to try turnips. Now that I’m all grown up I have enjoyed trying out new vegetables and in general I have been pleasantly surprised. I was a little unsure about the turnip experiment though. I can’t remember ever tasting them but my husband always said he didn’t like them. I bought them anyway on a whim and began to search Pinterest for recipes. I found a very simple recipe and started peeling and chopping. It turns out that my husband couldn’t really remember what they tasted like. He just remembered not liking them as a child. He thinks he only had them boiled so I decided to roast them.  I peeled and roasted the turnips and chopped them up into 1″ cubes. I added some cauliflower florets and drizzled them with avocado oil. I sprinkled them with salt, pepper and paprika and roasted them on a cookie sheet in a 400 degree oven for about 35 minutes.  I thought they were delicious – very mild. My hubby decided he really did like turnips after all.
