A couple of weeks ago I went out of town to a conference and tried some vegetables that I thought I didn’t like. That inspired me to try some new vegetables. One of my big goals in my fitness journey is to eat at least five servings of vegetables a day. Some days I meet that goal and other days it is a challenge. I have to make a conscious effort throughout the day to make sure I get those servings.
I was inspired by another Beachbody coach who posted a bok choy recipe on Facebook. My husband and I both liked it. The kids thought it was just so-so. I will be adding to the vegetables I serve for my family. Maybe my kids will grow to like it better but I’m O.K. with it if they just tolerate it.
Bok choy is a type of cabbage and is a part of many Chinese dishes. It doesn’t look much like a cabbage. It is high in Vitamin A, Vitamin C and calcium and is low in calories. I prepared it with some sesame oil, pepper, ground ginger and a splash of orange juice at the end. The flavor was very mild. I’m glad I thought ahead and made extra so that I can take some to work.
